Kinsale Gin combines classic juniper spice with plants from the countryside around Kinsale. Its recipe includes 21 botanicals. Locally foraged ingredients are harvested by hand and in season, leaving enough plants and fruit for wildlife and future growth.

The botanicals are dried before distillation. Meadowsweet, elderflowers and elderberries, along with lemon verbena and lemon geranium, contribute to the aromatic interplay. Floral sweetness complements the juniper's pleasantly bitter character. Kinsale Gin is a London Dry Gin with no flavouring or colouring added after distillation and comes at 40% alcohol in a 0.7-litre bottle.

Tasting Notes:

• Nose: Juniper comes through first, quickly followed by bitter orange and lemon peel. Layered spice notes and the freshness of spearmint complete the nose.
• Palate: The gin feels smooth on the palate, immediately revealing distinct flavours. Berries, apples and citrus fruits combine with fruity notes of lemon verbena and lemon balm. Meadowsweet and elderflowers add floral accents before earthy spice notes from roots and seeds follow.
• Finish: Warm spice notes from roots and seeds give way to a delicate juniper note. Dried lime and lemon, together with vanilla from Madagascar, complement the fresh finish. Honey and light citrus notes linger.

Distillery/Bottler:

Kinsale Spirit Company has its roots in the Irish harbour town of Kinsale. Tom O'Riordan developed the gin recipe with his sister Clodagh, a trained distiller. They gathered native plants, sourced other aromatic ingredients and tested numerous recipes. The first bottles went on sale in mid-2017.

Tom O'Riordan continued to build the company with local hospitality and drinks entrepreneurs Ernest Cantillon and Colin Ross. Alongside Kinsale Gin, the range now also includes Irish whiskeys, among them Red Earl, Great Earl and Spanish Earl.
