This ten-year-old Knockdhu forms part of the limited Wormtub Single Cask series. The single malt was fully matured in a single Pedro Ximénez sherry hogshead. That Boutique-y Whisky Company bottled 324 bottles at a natural cask strength of 58.9%; the whisky is neither chill-filtered nor coloured.

Its oily, robust character combines earthy malt, candied citrus and plum with shortbread, hay, hazelnut and chocolate. Toffee, overripe fruit and marmalade lead into ginger, pink peppercorn and a savoury-sweet hint of honey-glazed ham.

Tasting Notes:

• Nose: The nose is oily and robust, with deep, earthy malt, candied citrus and plum. Shortbread and hay mingle with hazelnut cream, fruit-filled chocolate truffles and ripe fruit with a lightly fermented character.
• Palate: On the palate, icing-sugar sweetness and bold peppery spice combine in an oily, warming opening. Toffee, overripe fruit, oily malt, grainy Weetabix notes and marmalade follow.
• Finish: The finish brings chocolate caramel, crème brûlée, apricot and ginger, followed by pink peppercorn and a hint of honey-glazed ham. The combination remains robust, oily and spicy to the end.

Distillery/Bottler:

Knockdhu Distillery began operating in 1894 in the Highland village of Knock. It takes its name from the Black Hill, Knockdhu in Gaelic, whose springs still provide water for the mash. The distillery uses copper pot stills, wooden washbacks and dunnage warehouses. Worm tubs are also part of its equipment: in these cold-water-filled vessels, the alcohol vapour condenses inside long copper coils. This design can produce a heavy, robust spirit character.

That Boutique-y Whisky Company was founded in 2012 as an independent bottler and producer and is known for limited-edition whiskies from various distilleries. This edition was released under Wormtub, a brand managed by Atom Brands. Its Single Cask series showcases individual casks from Scottish distilleries that use traditional worm-tub condensers.
