Special Features:

Maboroshinotaki Cloudy Sour is a naturally cloudy, sparkling Junmai sake from Kurobe in Japan’s Toyama Prefecture. The 0.5-litre bottling has an alcohol content of 7%.

Secondary fermentation in the bottle creates fine, refreshing bubbles. With the rice polished to 60%, the sake combines green apple, strawberry and cherry with yoghurt-like lactic acidity, gentle sweetness and a delicate rice note. Sweetness and acidity remain balanced. Overall, the sake feels light and distinctly drier than its milky appearance suggests.

Because of the lively carbonation, the bottle should be well chilled and opened carefully in several stages. A white wine glass particularly enhances the interplay of fruit, acidity, carbonation and cloudy rice sediment. This approachable sake is suitable as an aperitif or as an accompaniment to light starters.

Mikunihare Shuzo Co., Ltd., founded in 1882 in Ikuji near Kurobe, brews Maboroshinotaki in Toyama Prefecture. Iwaseya Shōzu, a soft spring fed by snowmelt from the Japanese Northern Alps, emerges on the brewery grounds. This water shapes the brewery’s smooth style of sake.
