This vintage release from Maxime Trijol brings together Cognac distilled in 1978 in Fins Bois and the influence of two oak casks. Casks 401 and 126 yielded 480 bottles, bottled on 19 January 2018 and individually numbered. The Cognac has an alcohol content of 40% and comes in a wooden box with a viewing window.

In the glass, it is golden with orange highlights. Its character combines concentrated fruit notes with vanilla, restrained woody notes and a delicate hint of rancio. The soft opening gives way to a wood-led palate, while the finish is slightly dry. To explore its aromas, enjoy it neat at around 20 °C after a meal.

Tasting Notes:

• Nose: The Cognac initially offers intense aromas of fruit jam, candied quince and vanilla. Subtle, well-integrated woody notes and a delicate touch of rancio then emerge.
• Palate: The opening is soft with a slightly piquant edge. Woody notes unfold on the mid-palate, balanced by fruity and vanilla flavours.
• Finish: The fairly long finish is slightly dry, giving the Cognac a distinctive conclusion.

Distillery/Bottler:

The history of Maxime Trijol in Saint-Martial-sur-Né dates back to 1859, when the family installed its first still. In 1962, Maxime Trijol officially became a professional distiller; his son Jean-Jacques took over ten years later. Since 2013, Jean-Jacques's daughters Anne-Sophie and Pauline have also helped to run the independent family house. Today, the business operates 22 stills, each with a capacity of 2500 litres.

The house grows its own grapes in Grande and Petite Champagne and oversees production from cultivation to bottling. Its methods include double distillation of the wines on their lees. During the second distillation, the distiller separates the fractions and selects the heart that will become Cognac. Ageing then takes place in French oak casks. These general production methods provide context for the house's range of Cognacs from different growing areas, which includes this Fins Bois.
