Special Features:

Windmill Collection No. 5 combines unpeated Millstone single malt with a full seven-year maturation in two first-fill Banyuls wine hogsheads. The whisky was distilled on 5 March 2019 and bottled from casks 190097 and 190099 on 6 May 2026 at a cask strength of 53.2%. Limited to 571 bottles, this distillery bottling is non-chill-filtered and has no added colouring.

The Banyuls maturation is reflected in a rich, fruity and sweet profile: ripe apricot, dark plum, honey and vanilla lead into juicy cherry, orange, caramel and bittersweet chocolate. Cinnamon, cardamom and oak give the wine-driven fruit a long, spicy framework.

Tasting Notes:

• Nose: On the nose, ripe apricot and dark plum combine with honey, vanilla and an orange accent, while intense cherry fruit complements the bouquet.
• Palate: On the palate, juicy cherry, orange and bittersweet chocolate meet caramel, cinnamon, cardamom and soft vanilla over a creamy texture.
• Finish: The finish is long and spicy, with lingering oak, cherry sweetness, cinnamon and vanilla.

Distillery/Bottler:

Zuidam Distillers produces Millstone in Baarle-Nassau and also bottled this edition itself. Fred and Hélène van Zuidam founded the family business in 1976; it is now run by their sons Patrick and Gilbert. The first experimental whisky casks were laid down in 1996. The Millstone name refers to the Dutch windmills that grind the grain for the whisky.

For Millstone, Zuidam employs a seven-day fermentation and slow distillation in small copper pot stills. This approach promotes the fruity, complex underlying character of the spirit before the selected casks further shape each release.
