The barley for Millstone Single Malts from Zuidam is milled in typical Dutch mills. An above-average fermentation period of seven days is followed by slow distillation in pot stills. The result: fruity, complex raw spirits. The family business ages these spirits in a wide selection of premium casks at an angel's share of 4-6 percent in its own warehouse.
With the Millstone 2020/2025 – Medium Peated Sauternes Cask #200164, we were also able to secure a single cask exclusively for the German market. Distilled from peat malt, this exclusive bottling matured in a single French fortified wine cask and filled only 297 bottles, with a profile of sweetness, citrus zest, and spicy smoke.
