Special Features:

This peated Millstone spent its full six years of maturation in Pedro Ximénez sherry casks. Zuidam distilled the whisky on 9 November 2016 from malt peated to 50 ppm and bottled it on 24 November 2022 at 46%. It has no added colouring and is not chill-filtered; the 0.7-litre bottle comes in a tube.

Gentle smoke sits alongside dark fruit and liquorice. Raisins, dates, orange and plum bring sweet fruit notes, while lemon, cinnamon, nutmeg and herbs add fresher and spicier accents. Dark chocolate, tobacco, spice and smoke linger in the long finish.

Tasting Notes:

• Nose: On the nose, gentle smoke and dark fruit mingle with liquorice and spice. Orange, candied lemon, raisins and plums follow, accompanied by a hint of herbal tea.
• Palate: On the palate, raisins, dates, orange and plum meet smoke and chocolate. Cinnamon and nutmeg complement the fruit; orange zest, chamomile and mint give way to a gentle grassy note.
• Finish: The finish is long. Dark chocolate and tobacco linger alongside spice and fading smoke.

Distillery/Bottler:

Zuidam Distillers is a family-run distillery in Baarle-Nassau. Fred and Hélène van Zuidam began making liqueurs and genever in 1976; their sons Patrick and Gilbert now run the company. Its first experimental whisky casks date from 1996. The name Millstone refers to the windmills used to mill the grain for its whisky. A seven-day fermentation is followed by slow distillation in small copper stills. Zuidam makes the whisky itself and bottles it as a distillery release.
