Morris is based in Rutherglen in the Australian state of Victoria. The house has produced fortified wines since 1859, building experience in winemaking, blending and cask maturation over six generations. In 2016, Morris brought a long-idle still back into service and began applying this knowledge to whisky. Built in Adelaide in the 1930s and installed at the site in 1941, the still is now named Aurora. It works alongside a second still of the same design, named Ella.
Morris uses exclusively Australian malted barley for its single malts, processing and fermenting it in the family-owned brewery. The water comes from the Snowy Mountains. Double distillation takes place in copper hybrid stills that combine a pot still with a column. For the initial maturation, the team selects former Shiraz and Cabernet casks made from French and American oak from the family's wineries in Barossa and Coonawarra. The in-house cooperage treats their interiors by scraping, toasting and charring over an open flame. Subsequent finishes in casks that held Morris fortified wines are another key part of its approach.
