Special Features:

Apple and cucumber take centre stage in Project Two. Both botanicals are grown in Germany and add a fresh, fruity character alongside the juniper. Coriander completes the selection. The base is grain alcohol made from a wheat mash distilled in a pot still. The gin is bottled at 42% in 0.5-litre bottles.

The sweet-tart apple note contrasts with the green freshness of cucumber, while juniper and gentle spice maintain a link to classic gin flavours. Both Indian and Mediterranean tonic work well in a gin and tonic. The back label recommends one part gin to three parts Fever Tree Mediterranean Tonic.

Tasting Notes:

• Nose: On the nose, the green freshness of cucumber meets a delicate apple aroma. Subtle juniper and citrus notes complement the gentle bouquet.
• Palate: Apple and cucumber alternate on the palate, accompanied by moderately pronounced juniper. Herbs, gentle spice notes and a light sweetness round out the flavour; the mouthfeel is full-bodied, while the character remains light.
• Finish: The finish is long and pleasantly dry, without losing its lightness.

Distillery/Bottler:

Spirits of Old Man is the brand of Oldman Spirits, based in Schleswig-Holstein. The company first became known for its Rum Projects and also developed the Gin Project range, with each bottling highlighting different botanicals. Project Two focuses on the combination of apple and cucumber.

Operations in Jübek include developing the company's own spirits, selecting and blending rum, and providing single-cask and contract bottling services. Until 2019, bottling, labelling and packaging were carried out entirely by hand. Semi-automatic and fully automatic bottling equipment was introduced in the following years. In August 2024, the team also included two distillers.
