The distillation takes place in a unique Faraday copper pot still, with the whisky initially maturing in bourbon casks and then refined in Madeira wine casks. Tasting Notes:
- Nose: The nose reveals aromas of fresh apples and citrus fruits, combined with cream fudge and sultanas.
- Palate: Incredibly smooth with prominent fresh as well as rich dried fruits. Delicate with a slight bitter hint on the palate that keeps it refreshing.
- Finish: The finish presents a long aftertaste of Madeira cake and sultanas.
Distillery/Bottler: The Penderyn Distillery in Wales places great importance on its production methods and uses the process of distillation in a Faraday copper pot still. Penderyn Legend is made from pure malted barley and initially matures in classic ex-bourbon casks before it unfolds its unique aroma in Madeira casks. The whisky forgoes chill filtration and coloring to ensure the purity of the taste.
