Special Features:

Star anise defines Pernod's character. Its recipe uses distillates of star anise, fennel and 14 other aromatic plants, including coriander and mint. It contains only a small amount of liquorice, a key distinction from pastis. This bottling has an alcohol content of 40% and contains the colourings E104 and E124.

Diluting it with cold water turns the clear, pale golden liquid into a milky-looking aperitif. Natural anise oils cause this clouding. Besides the traditional serve with water, Pernod can also be used in cocktails.

Tasting Notes:

• Nose: Star anise and fennel lead on the nose. Fresh herbs are accompanied by subtle mint notes, citrus peel and delicate spice.
• Palate: Pronounced anise sweetness opens the palate. Herbs, a light liquorice note and gentle peppery spice follow. The overall impression remains clear and structured, without excessive sweetness.
• Finish: The long finish carries anise and a gentle herbal dryness. It fades with a fresh, slightly cooling sensation.

Distillery/Bottler:

The history of the French brand Pernod dates back to 1805. Pernod Fils originally produced absinthe in Pontarlier, with wormwood among its ingredients. Today's anise liqueur is based on a recipe developed in 1920. The brand thus combines its roots in absinthe production with a distinct tradition of anise-led aperitifs.
