Special Features:

Three stages of cask ageing shape this Plantation Rum from Fiji: 7 years in bourbon casks in its tropical homeland are followed by 4 years in Ferrand casks in France. The rum then matures for 1 year in a Marsala wine cask. Marsala is a fortified wine from Sicily; here, its cask provides the final maturation stage after bourbon and Ferrand.

Rum Co. of Fiji distilled the rum from molasses in 2011. Fermentation lasted 4 to 5 days, followed by distillation in a column still. This single-cask bottling from cask 08 belongs to the Single Cask Collection 2023 and contains no added sugar. It was bottled at 51.6% and contains no colouring. The 0.7-litre bottle comes in gift packaging.

Tasting Notes:

  • Nose: The nose is fresh and intense. Pipe tobacco and molasses mingle with figs and peach. Allspice and mint add further layers, alongside a little smoke.
  • Palate: The rum feels creamy on the palate, with notes of flambéed banana, plum, apricot and orange. Dark chocolate and marzipan complement the fruit. Cayenne pepper and cloves remain in the background.
  • Finish: Roasted almonds, pear and pineapple emerge in the lingering finish. A trace of eucalyptus and very little smoke accompany the aftertaste.

Distillery/Bottler:

Rum Co. of Fiji has been distilling in Lautoka since 1980. The distillery uses locally grown sugar cane, harvested by hand from Fiji’s volcanic soils, and water from the surrounding region. Its production methods include maturation in selected former bourbon casks under tropical conditions.

Plantation is backed by Maison Ferrand and cellar master Alexandre Gabriel. The brand grew out of the Cognac house’s relationships with rum distilleries that purchased used Ferrand casks. Gabriel selects rums at their distilleries of origin and has them matured further in France after ageing in their home country. For the Single Cask Collection, an additional maturation takes place in selected wine, beer or spirits casks. The series thus combines the origins of the spirits with Ferrand’s approach to cask maturation.
