Providence Dunder & Syrup takes its distinctive approach from the fermentation stage: juice and syrup from Cristalline sugarcane are fermented with selected yeasts and dunder. This liquid residue from previous distillations contributes to the rum’s aromatic complexity. Michel Sajous supplies the sugarcane from Saint-Michel de l’Attalaye, around 150 kilometres north of Port-au-Prince. Dunder & Syrup is the distillery’s second bottling.

The fermented wash is distilled twice in a pot still heated by a water bath. The spirit leaves the still at approximately 73% alcohol and is then gradually reduced to 56%. The rum undergoes no cask maturation and is released in a 0.7-litre bottle. Its fruity, herbal and savoury-smoky notes also lend themselves to a characterful Daiquiri.

Tasting Notes:

• Nose: On the nose, guava and honey mingle with the scent of scorched sugarcane.
• Palate: The rum feels creamy on the palate. Red fruit meets thyme and notes of smoked meat.
• Finish: The finish fades with almond and vegetal notes.

Distillery/Bottler:

Distillerie de Port-au-Prince was founded in the Haitian capital in 2018. Herbert Barbancourt Linge, a descendant of the Barbancourt family, carries out distillation there in a copper Müller pot still. With Providence, the distillery draws on older Haitian methods for white rum produced by batch distillation. Sugarcane juice and syrup form the basis of this bottling.
