Special Features:

Two-stage maturation defines Rhum J.M X.O: 5 years in former bourbon casks are followed by 1 further year in casks of different sizes and toast levels. The blend brings together rhums aged for at least 6 years. Made from fresh sugarcane juice, this rhum agricole carries the protected AOC Martinique designation of origin.

In the glass, it has a bright golden colour with lemon-yellow highlights. Fruit and warm spice evoke candied fruit and gingerbread. The rum is bottled at 45% with no added sugar or colouring. The 0.7-litre bottle comes in gift packaging.

Tasting Notes:

• Nose: The nose is rich in candied and dried fruit. Gingerbread notes follow, with honey, nutmeg, cinnamon and vanilla.
• Palate: The rum is rounded and balanced on the palate. The fruit and spice notes of the nose return before a sweet tonka bean note joins them.
• Finish: The finish is warm, lingering and enveloping.

Distillery/Bottler:

The Distillerie de Fonds-Préville lies near Macouba in northern Martinique, between the Roches and Macouba rivers at the foot of Montagne Pelée. Established as a sugar estate in the late 18th century, it took a new direction in 1845 when Jean-Marie Martin acquired it and converted the sugar factory into a distillery. His initials became the name Rhum J.M.

Growing sugarcane is part of J.M's own production work. The distillery raises young plants in a nursery, and more than three quarters of the sugarcane it processes comes from the immediate surrounding area. The cane is crushed as soon as it arrives. The fermented sugarcane juice is distilled in two traditional Creole copper columns.

J.M also takes an active role in preparing the wood, charring some of its casks itself. The distillery uses both new and previously used American or French oak casks for maturation. This broader approach to cask preparation provides the background to the different maturation profiles of J.M's bottlings.
