Lemon Drizzle develops its lemon character during distillation. Sipsmith adds sun-dried lemon peel to its London Dry recipe, along with fresh, hand-peeled lemons whose aromas are captured through vapour infusion. Lemon verbena contributes another lemony dimension. The gin is bottled at 40.4% in 0.7-litre bottles.

The idea brings together two British traditions: lemon gins from the early 20th century and lemon drizzle cake, a cake finished with lemon icing. The recipe first appeared in the experimental Sipping Society gin subscription. Its positive reception led to a place in the permanent range. Served neat, it offers a chance to explore the interplay of citrus and cake notes; Mediterranean tonic suits it in a gin and tonic, while a Lemon Martini also complements its character.

Tasting Notes:

Distillery/Bottler:

Sipsmith was founded by childhood friends Sam Galsworthy and Fairfax Hall together with Master Distiller Jared Brown. In 2009, the final recipe for their London Dry Gin was developed on their first still, Prudence. The distillery began in Hammersmith, London, and moved to Chiswick in 2014. Prudence was developed with German stillmaker Christian Carl; its design combines a pot still with a column and a Carter Head for vapour infusion.

Sipsmith uses English wheat spirit and copper stills to make its gin. After gentle warming, the botanicals steep in the spirit overnight. The next morning, the temperature is raised gradually, and the heads and tails are separated from the heart. Only this heart is used for the gin, which is then diluted with water to bottling strength. Copper helps distribute heat evenly and binds unwanted sulphur compounds during distillation.
