A Pedro Ximénez sherry cask finish complements this SLYRS whisky's initial maturation in American white oak. The single malt first spends three years in these oak casks, followed by several months in former Pedro Ximénez sherry casks from Bodegas Tradición. The sherry casks used are at least 50 years old. Their previous contents lend the whisky mouth-filling fruitiness and a gentle finish.

The miniature contains 0.05 litres at 46% alcohol. The whisky is not smoky and is bottled without chill filtration or added colouring. Its colour recalls dark honey. A temperature slightly below room temperature is suitable for tasting.

Tasting Notes:

• Nose: The fruit-led aroma recalls dried damsons and dark, dried berries.
• Palate: The whisky is rounded on the palate. Gentle sweetness combines with spice without overshadowing the characteristic SLYRS character.
• Finish: The soft finish lingers, leaving an impression of raisins.

Distillery/Bottler:

SLYRS is based in Neuhaus on Lake Schliersee in Upper Bavaria. Florian Stetter developed the idea for a Bavarian single malt after a trip to Scotland in 1994. The first SLYRS was distilled in 1999, and the first bottles went on sale in 2002. Building its own whisky distillery in Neuhaus marked another milestone in 2007. Pedro Ximénez and Oloroso have been part of the finish range since 2010.

For its single malts, the distillery uses two-row spring barley from the area around Munich and water from the Bannwaldquelle spring in the Schliersee Alps. Its current production methods include fermentation over several days with whisky yeasts cultivated in-house and slow distillation in copper pot stills. New American white oak casks provide the foundation for maturation, with previously filled casks subsequently used for selected finishes.
