Special Features:
This limited Studio Edition combines Stauning’s smoked rye whisky with a finish in porter beer casks from the Danish craft brewery To Øl. It is made from 60% locally grown rye and 40% locally grown barley. All the grain is floor-malted at the distillery, kiln-dried and smoked with Danish peat and heather. The spirit is double-distilled in 24 small, direct-fired copper pot stills.
The whisky was filled into heavily charred new American white oak casks on 28 March 2022. On 20 February 2024, it was transferred to the porter beer casks for a second maturation and finish before being bottled on 3 February 2026. This release combines ten casks numbered 11323 to 11332 and comprises 2,500 bottles.
The porter finish deepens the malty, roasted character with coffee, dark chocolate, dried fruit and brown sugar while supporting the creamy mouthfeel. Spicy rye remains clearly discernible alongside the gentle peat and heather smoke.
The whisky is bottled at 51.4% in 0.7-litre bottles. It has its natural colour and is not chill-filtered.
Tasting Notes:
- Nose: On the nose, roasted malt and vanilla mingle with campfire smoke.
- Palate: The whisky is full-bodied and creamy on the palate, with rye bread, beeswax, orange peel, ripe cherry, dark chocolate and warm spices.
- Finish: The long, warm finish brings plum, raisins, brown sugar, coffee and a hint of golden tobacco, balanced by fresh rye spice and gentle peat and heather smoke.
Distillery/Bottler:
Stauning Whisky began in 2005 as a project created by nine friends in the village of Stauning in western Jutland. They started in a former butcher’s shop, using local raw materials and equipment they had adapted themselves to make Danish whisky. The first commercial bottles appeared in 2011. Stauning has operated from a purpose-built distillery since 2018 while retaining floor malting, small pot stills and direct firing.
For this Studio Edition, Stauning handled both production and bottling.
