Special Features:

Small Batch #2 combines maturation in ex-bourbon casks with a subsequent finish in ex-Oloroso Sherry Butts. Rest & Be Thankful selected whisky from four casks for this release. This non-smoky single malt comes from InchDairnie Distillery in the Scottish Lowlands. The casks were filled in October 2016 at an alcohol strength of 63.5%; the six-year-old whisky was bottled in February 2023 at 46%. The release comprises 3,265 bottles. It was neither chill-filtered nor coloured.

Malted barley from Yorkshire was used to make the spirit. Fermentation lasted 66 hours and the distillation run took five hours. The heart cut was collected between 75% and 67% alcohol. Fruit and spice shape the aroma, while chocolate, nuts and sherry-influenced orange define the flavour.

Tasting Notes:

• Nose: On the nose, apricot notes meet spicy aromas.
• Palate: On the palate, chocolate and nuts combine with sherry-influenced orange notes.
• Finish: Dark chocolate and grain notes linger on the finish.

Distillery/Bottler:

InchDairnie is located in Fife in eastern Scotland. The distillery uses a hammer mill to grind the grain very finely. Starch is converted into sugar in a separate vessel before a mash filter uses membranes to press out the sugar-rich liquid. This process provides a high yield and allows different grains to be processed. The fermentation vessels stand outdoors, and yeast selection depends on the season and the grain.

Rest & Be Thankful began releasing independent single-cask bottlings in 2012. Its connection with Bruichladdich meant that whiskies from Bruichladdich, Port Charlotte and Octomore were among its first releases. Casks from Springbank, Bowmore and Macallan, among others, followed later. Alongside single-cask releases, the bottler also offers small batches and is expanding its cask stocks for future releases.
