Takeno News Sparkling Sake
Special features: The Takeno News Sparkling Sake comes from the Takeno Sake Brewing Co. Ltd. in Japan and is produced using the traditional Yamahai method. In this method, yeasts and lactic acid bacteria develop naturally, without added acid starters. This sake uses local Kyo no Kagayaki rice, which is polished to 50%, thus achieving the quality characteristics of a Junmai Daiginjo. With an alcohol content of 11%, this sake offers a refreshing tasting experience. The bottling is done as an original bottling, without additional packaging.
Tasting Notes:
- Nose: The nose reveals vibrant, refreshing aromas of fresh lemon and green apple.
- Palate: The palate presents a lively and fine texture, supported by delicate, well-integrated bubbles. There is a balance between the natural sweetness of the rice and a pronounced, yet pleasant acidity.
- Finish: The finish is long and pure, with a lasting, refreshing sensation of freshness.
Distillery/Bottler: The Takeno Sake Brewing Co. Ltd. has switched its entire production to the traditional Yamahai method since 2025. This method promotes the natural development of yeasts and lactic acid bacteria, enhancing the aromatic complexity of the sake. The local Kyo no Kagayaki rice used in production contributes to the high quality of the bottling. The brewery has focused on the tradition of sake brewing and delivers high-quality products.
