Teeling Stout Cask Finish centres on the exchange between whiskey maturation and brewing. Galway Bay Brewery uses casks from Teeling’s Small Batch Whiskey for its 200 Fathoms Imperial Stout. Teeling then takes back the beer-seasoned casks and uses them to finish the Small Batch Whiskey. This gives the previously used whiskey casks another purpose, while the dark beer contributes its malty influence to the bottling.

This edition belongs to Teeling’s Small Batch Collaborations, a series of joint projects with other craft producers. Its stout finish combines dark chocolate notes and roasted barley with tart fruit. The whiskey is bottled at 46% without chill filtration and comes in a 0.7-litre bottle with gift packaging.

Tasting Notes:

• Nose: On the nose, dark chocolate and truffles mingle with tart apples and a note reminiscent of sea spray.
• Palate: On the palate, sweet malt and roasted barley meet tart fruit and black cherries.
• Finish: Bitter oranges, wholemeal biscuits, honeycomb and cream linger on the finish.

Distillery/Bottler:

The Teeling family’s history in Dublin whiskey-making dates back to 1782, when Walter Teeling opened a distillery on Marrowbone Lane. Since 2012, Jack and Stephen Teeling have continued this family tradition with their own whiskey brand. In 2015, they opened a new distillery in the Liberties, Dublin’s historic distilling district, close to the former family site. It was the first new distillery to open in the city in over 125 years.

At Teeling, cask selection plays an important role in developing different whiskey characters. The collaboration with Galway Bay Brewery illustrates this approach particularly well: both companies use the same casks in succession for whiskey and Imperial Stout. Teeling takes back the beer-seasoned casks for finishing, continuing the collaboration on the whiskey side.
