This rum's pale colour conceals three years of cask maturation in Barbados. The Real McCoy 3 Year Old matures in heavily charred American oak Bourbon Barrels. A single charcoal filtration then removes cask-derived colour while preserving the rum's aromatic character.

As a Single Blended Rum, it combines distillates from copper pot and column stills at the same distillery. The two types of distillate are blended before cask maturation. Barbadian spring water brings the rum to its bottling strength of 40%; no sugar or flavourings are added.

Its smooth profile combines citrus and floral notes with caramel and coconut, alongside subtle spice and wood. It can be enjoyed neat or over ice and works well in classic rum cocktails such as the Daiquiri and Mojito.

Tasting Notes:

• Nose: Bright citrus and floral scents meet vanilla on the nose. Subtle oak and nutmeg add to the aromas.
• Palate: The palate reveals buttery caramel with hints of coconut. Toasted caramel notes and marzipan round out the flavour.
• Finish: The long finish is warm and buttery, with notes of toasted coconut.

Distillery/Bottler:

Foursquare Distillery in St. Philip, Barbados, produces The Real McCoy under the direction of Richard Seale. For the brand, molasses is fermented with water and yeast for around 44 hours in closed, temperature- and pressure-controlled tanks. The carbon dioxide produced during fermentation is captured and reused to carbonate soft drinks.

Distillation produces two distinct building blocks: the copper pot still with two retorts yields an aromatically heavy rum, while the twin-column Coffey still produces a lighter one. Their combination forms the foundation of The Real McCoy's Single Blended bottlings.

The brand name recalls Bill McCoy, who sold Caribbean spirits off the US coast during American Prohibition and was known for unadulterated goods. The Real McCoy reflects this connection by avoiding added sweeteners, flavourings and chemical stabilisers.
