Cù Bòcan Signature brings lightly peated Highland whisky together with three different cask types: Bourbon, Oloroso Sherry and North American Virgin Oak. Maturation combines sweet, fruity and spicy impressions with a restrained smoky character. Signature has been part of the range since the Cù Bòcan relaunch in 2019.

The Bourbon casks contribute honey, coconut and milk chocolate. The Oloroso Sherry influence brings dark sugar syrup, coffee and paprika, while the North American Virgin Oak casks add citrus notes, pecan pie and cinnamon. These sweet and spicy elements complement the delicate smoke.

The whisky carries no age statement and is bottled at 46% without chill filtration or added colouring. Its bespoke bottle was developed with design agency Thirst Craft for the relaunch. The layered shape reflects the interplay of smoke, sweetness and different cask influences. The 0.7-litre bottle comes in gift packaging.

Tasting Notes:

• Nose: On the nose, malty aromas mingle with plenty of honey and juicy sultanas.
• Palate: The palate reveals burnt sugar, vanilla and sweet butterscotch notes. White chocolate and a little white pepper round out the flavours.
• Finish: On the finish, oak leaves a drying impression, accompanied by a gentle hint of peat smoke.

Distillery/Bottler:

Tomatin Distillery was founded in 1897 and lies south of Inverness in the Monadhliath Mountains. It was once Scotland’s largest malt distillery. Today it operates on a smaller scale and is particularly known for its light, mellow house style.

With Cù Bòcan, Tomatin explores a lightly smoky side of its production. Each winter, the distillery produces limited batches using lightly peated Scottish barley. The range explores how this spirit interacts with different cask types: alongside Signature, releases have featured influences from beer, wine and shochu casks, for example. Seasonal production and the deliberate choice of unusual maturation casks are therefore central to Cù Bòcan.
