Two Stacks Whiskey is reviving the tradition of whiskey bonding. It used to be common practice in Ireland for pub owners and grocers to blend and bottle their own whiskey. Today, the tradition is increasingly returning to Ireland. Two Stacks also transfers the whiskey to its own casks, lets it mature, and then creates custom blends.
Two Stacks Two First Cut is the first bottling from Two Stacks, which is available in a somewhat larger edition. But here too, each bottle was filled and labeled by hand. This blend combines five different whiskeys and is a very complex blend. The following were used for this whiskey: grain whiskey from a virgin oak cask (40%), grain whiskey matured in an ex-bourbon cask (40%), pot still whiskey matured in an ex-Oloroso sherry cask (8%), twice distilled single malt matured in an ex-bourbon cask (10%) and peated single malt matured in an ex-bourbon cask (2%). Because Two Stacks also stands for transparency, they state exactly what percentage of which whiskey is contained in the blend.
The First Cut is a whiskey with sweet, spicy notes and a long finish. The whiskey is uncolored and non-chill-filtered.
