Special Features:

Ace of Speys is an eleven-year-old Speyside single malt, distilled at Aberlour in 2014 and bottled by The Uncharted Whisky Co. in March 2026. It was matured in two Spinola sherry barriques that had previously held an Oloroso-style sherry made from Pedro Ximénez grapes. The casks accentuate the distillate’s fruity character with a bright, tropical sherry influence.

Cask reference UC057 yielded 653 bottles at 55%. The whisky retains its natural colour and was not chill-filtered. Its profile spans pear, mango and pineapple, followed by butterscotch, brown sugar, baked apple and spicy oak.

Tasting Notes:

• Nose: The nose combines pear sweets, dried mango and pineapple with butterscotch and oak, while a slightly dry note provides a restrained contrast.
• Palate: Baked apple and brown sugar meet dried mango and pineapple juice on the palate, accompanied by plenty of spicy oak.
• Finish: The long finish develops from tropical fruit through butterscotch to warming wood spices.

Distillery/Bottler:

Aberlour Distillery is located in the village of the same name, in the heart of Speyside. James Fleming founded it in 1879. The distillery makes its single malts with locally grown barley and spring water from the area around Ben Rinnes.

For Ace of Speys, the spirit came from Aberlour, while The Uncharted Whisky Co. selected the two Spinola sherry barriques and bottled the whisky independently. Jack Breslin and Dana de Vos run the bottling company in Fintry, Scotland. They personally select the spirits and casks and work by hand in very small batches. Each whisky is bottled when it has reached maturity rather than according to a fixed schedule.
