Bourbon and rye whiskey casks shape this ten-year-old single grain from Cooley Distillery. W.D. O'Connell combines the vanilla, caramel and honey notes contributed by the bourbon casks with the spice of the rye whiskey casks. This bottling belongs to the Bourbon & Rye Cask Series, which presents grain whiskey in small batches.

The whiskey is bottled at 48% in a 0.7-litre bottle. It is non-chill-filtered and contains no added colouring.

Tasting Notes:

• Nose: On the nose, juicy pear and vanilla mingle with pecans and cinnamon.
• Palate: On the palate, fruity notes meet candied walnuts and vanilla. Pepper and rye whiskey spice complete the flavour profile.

Distillery/Bottler:

Cooley Distillery stands on the peninsula of the same name in County Louth. John Teeling founded it in 1987 by converting a former potato alcohol production facility. Cooley produces both malt and grain whiskey, using copper pot stills for malt and continuous distillation columns for grain.

W.D. O'Connell was founded by Daithí O'Connell. His company now operates as O'Connell Spirit Merchants in Kilmacthomas, County Waterford, on the site of a former 19th-century workhouse. As an independent whiskey merchant and bottler, it focuses on cask maturation, cask selection and blending whiskeys. Its range includes single-cask bottlings as well as malts, grains and blends.
