Bill Phil brings together peated malt and Irish triple distillation. This single malt comes from Great Northern Distillery and matures exclusively in first-fill bourbon barrels. Alongside its smoky character, it offers a charcoal note, a creamy texture, malt, biscuits and citrus fruit. It is bottled at 47.5% in a 0.7-litre bottle, without chill filtration or added colour.

The name honours William Philip O'Connell, the great-grandfather of founder Daithí O'Connell. A blacksmith from County Limerick, he was known for a handmade peat-cutting spade called the Bill Phil Sleán. With this peated whiskey, the family returns to that connection with peat. Bill Phil is released in recurring small batches; the range also includes distinct single-cask bottlings.

Tasting Notes:

• Nose: Bergamot mingles with light peat smoke. Fresh cereal notes gradually emerge, accompanied by poached pear and Earl Grey tea.
• Palate: Buttery biscuit notes meet lightly smoked malt, banana bread and sweet cassia cinnamon on the palate. A subtle bergamot note complements the flavours.
• Finish: The long, delicate finish combines citrus oil with a subtle wisp of smoke.

Distillery/Bottler:

W.D. O'Connell is an independent whiskey bonder and bottler based in Kilmacthomas, County Waterford, on the site of a former 19th-century workhouse. Individual cask selection is central to its work: the team assesses how cask type, spirit and maturation time interact, deciding whether each cask should undergo further maturation or a finish. This approach applies across the range; Bill Phil, however, derives its character from maturation in bourbon barrels.

Great Northern Distillery in Dundalk, County Louth, produces the whiskey for Bill Phil. Operating since 2015, the distillery also supplies spirits to independent brands and other distilleries. It runs both pot stills and column stills and produces various styles of Irish whiskey, including double- and triple-distilled malt as well as peated malt.
