West Cork Cask Strength spends a further six months in cask after blending. Grain and malt whiskey come together in heavily exhausted ex-bourbon casks. This additional resting period allows the components to integrate rather than introducing a new wine-cask influence.

This triple-distilled whiskey is bottled at its cask strength of 62%, without chill filtration or added colouring. Malt, dried fruit and orange peel shape its flavour, while vanilla and peppery spice complement its powerful character. The bottle contains 0.7 litres.

Tasting Notes:

• Nose: On the nose, malt and dried fruit combine with balanced sweetness. Pepper, pronounced vanilla, a little toffee and a light floral note add further detail.
• Palate: The whiskey is full-bodied on the palate, with powerful alcohol and heat. Malt, dried fruit and orange peel meet floral notes, sweet and spicy vanilla, a little cereal sweetness, toffee and salted caramel.
• Finish: The long, lingering finish leaves grassy notes.

Distillery/Bottler:

West Cork Distillers was founded in 2003 by childhood friends John O’Connell, Ger McCarthy and Denis McCarthy. Their first experiments in distillation used two small stills in a room behind Denis’ house in Union Hall. In 2014, the company moved to Skibbereen in southwest Ireland.

Some of the distillery equipment was built in-house to meet the needs of the growing business. This included a still known as Rocket. West Cork brings distillation, maturation and bottling together at its own site and sources ingredients locally wherever possible.
