This eight-year-old Orkney single malt was distilled at Highland Park in 2018 and bottled by Signatory Vintage for the Un-Chillfiltered Collection in June 2026 after a finish in first-fill Pedro Ximénez sherry butts. It was bottled at 46% with natural colour and without chill filtration.

Heather honey, raisins, dates and orange sit alongside sea air and gentle peat smoke. Dark sugar syrup, dark chocolate, caramel, malt and baking spices complement the sweetness shaped by the PX finish, while the texture is almost syrupy. The maritime, lightly smoky character therefore remains discernible alongside the rich sherry fruit.

Tasting Notes:

• Nose: The bouquet combines sweet sherry notes with raisins, dates and a delicate malty note. Heather honey and a light accent of smoke follow.
• Palate: On the palate, robust malt and creamy caramel meet fruity sherry sweetness; dark chocolate, dried fruit and a subtle peaty, spicy note complement the almost syrupy texture.
• Finish: Dried fruit and chocolate define the long finish, which fades with sweet, spicy accents and mild smoke.

Distillery/Bottler:

Highland Park is located in Kirkwall on Orkney and traces its history back to 1798. The distillery dries hand-turned malt in two traditional kilns and uses heather-rich peat from nearby Hobbister Moor. This aspect of its production provides a clear context for the aromatic, restrained peat smoke of the Whitlaw distillate.

Signatory Vintage was founded in 1988 by Andrew Symington and his brother and operates as an independent bottler. Andrew Symington acquired Edradour Distillery in 2002, and by 2007 the business had relocated entirely to its site in Pitlochry. Signatory Vintage bottled this Whitlaw after the PX finish and selected it for the Un-Chillfiltered Collection.
