Special Features:

For Flying Dutchman No. 3, Zuidam combines new American oak with Oloroso and Pedro Ximénez sherry casks being used to mature rum for the first time. The rum matures for at least three years in these three cask types and is bottled at 40%. Its flavour brings together sweet fruit, nuts, vanilla and woody notes.

Sugarcane molasses forms the base. Zuidam uses two yeast strains for fermentation and keeps the temperature at a controlled low level. This process takes place in small batches and lasts at least two weeks, contributing to the rum's fruity character. It is then distilled three times in small, handmade copper pot stills. The bottles are also labelled by hand.

Tasting Notes:

• Nose: On the nose, roasted nuts and sweet, sherry-influenced fruit mingle with vanilla cream and toffee. Burnt sugar and dark oak notes complete the picture.
• Palate: The rum feels dense and almost chewy on the palate. The nut, fruit, vanilla, toffee and oak notes continue, joined by brown sugar, tinned peaches and a light touch of charred cask wood.
• Finish: A pronounced, spicy sherry note lingers through the long finish.

Distillery/Bottler:

Zuidam Distillers is an independent family distillery in Baarle-Nassau in the Netherlands. Now run by the second generation, the business produces and processes its own distillates and extracts. Alongside Flying Dutchman Rum, its range includes genever, gin, liqueurs and Millstone Whisky.

For Flying Dutchman, the family deliberately chooses small pot stills rather than the more efficient distillation in large columns. This slower approach allows them to control flavour during distillation. The rum subsequently matures in small casks.
