Special Features:

Former Amarone wine casks shape this three-year-old Flying Dutchman release. Part of the Special Batch #1 edition, the rum is made from sugar cane molasses. After at least two weeks of fermentation, the fermented molasses is distilled at least twice in copper pot stills before the rum matures in casks previously used for Amarone.

The Amarone casks contribute to the fruity aroma and deep golden colour. Tropical fruit, red berries and chocolate define this rum’s character. Zuidam bottles it at 40%, without chill filtration or added colouring.

Tasting Notes:

• Nose: The nose opens with ripe to overripe mangoes and guavas. Cherries and raspberries gradually emerge alongside delicate floral notes, before pronounced honey and liquorice notes round out the aroma.
• Palate: On the palate, tropical fruit combines with chocolate, dried fruit and orange to create a balanced, layered flavour.
• Finish: The medium-length finish is delicate, with lingering citrus fruit, red woodland berries, chocolate and honey.

Distillery/Bottler:

Zuidam Distillers is wholly owned and run by the van Zuidam family. The company began distilling rum in 2008. The Flying Dutchman brand takes its name from the legend of the ghost ship.

For Flying Dutchman, Zuidam ferments molasses in small batches at a low temperature using two yeast strains. The long fermentation helps develop fruity aromas. The distillery then uses small, handcrafted copper stills. This labour-intensive process allows it to control flavour precisely during distillation.
