Doba-Yej combines traditional agave processing with a focus on the cocktail bar. Los Siete Misterios developed this mezcal specifically to be enjoyed both neat and mixed. It is made entirely from Espadín agaves, whose botanical name is Agave angustifolia. Doba-Yej is the Zapotec name for Espadín. This bottling comes from Oaxaca and has an alcohol content of 44%.

The agave hearts are cooked in an underground, cone-shaped oven using wood and heated river stones. They are then crushed using a horse-driven stone mill known as a tahona. The mezcal is subsequently distilled twice in copper stills, making Doba-Yej the brand's first copper-distilled bottling. Alongside its citrus character, it has floral violet notes, touches of toasted caramel and a hint of grapefruit.

Tasting Notes:

• Nose: Lime and orange lead on the nose. Hints of baked apple and pear accompany a subtle smoky note.
• Palate: The mezcal has a soft mouthfeel on the palate.
• Finish: The finish is long-lasting, fresh, lemony and sweet.

Distillery/Bottler:

Eduardo and Julio Mestre founded Los Siete Misterios in 2010. The brand works with local mezcal producers and communities in Oaxaca to preserve traditional production methods and support the regional economy. Its original mezcals came from Sola de Vega; with Doba-Yej, production expanded to other locations in Oaxaca, including Santiago Matatlán, San Dionisio and Yautepec.

Los Siete Misterios uses only mature agaves. During the traditional cooking process, their hearts remain in the earth oven for three to five days, then rest for a few days before crushing. The juice and fibres ferment naturally, with only spring water added. Depending on the product, the brand uses copper stills or clay vessels, preserving different regional distilling traditions.
