Special features: This mezcal is produced by Baltazar Cruz Gomez, a first-generation palenquero from San Luis del Rio, Oaxaca. He uses wild-harvested Tepextate agaves, which are cooked in traditional 16-ton ovens and crushed with a mule-drawn tahona. Fermentation takes place in pine wood fermentation tanks over four days with the natural yeast of the distillery. It is distilled in a 300-liter copper pot still, with the mezcal bottled at its original strength of 48.5% without additives.
Tasting Notes:
Nose: Intense floral aromas of violets, lilies, and wildflowers, accompanied by fruity notes of mamey, strawberries, and tropical fruits.
Palate: Initially robust with floral tones and a hint of the typical Tepextate character. After aeration, the flavor opens up and becomes sweeter, with fresh tropical fruits and floral notes.
Finish: Medium-long, with lingering floral and fruity impressions that gradually fade away.
